Winter Wellness at Petersham Nurseries led by Rachel de Thample

Learn how to boost your immunity, grow nourishing plants indoors in the cold months, taste a whirlwind of delicious wintery recipes and make some store cupboard remedies to take home which will help see you through the end of winter and beyond.

Overview of the day:

10.30am - Start the morning with a taste of Rachel’s carrot cake flapjacks and apple scrap chai and an introduction on how to use food as medicine.

10.30-11.30am - We’ll then go foraging to find winter greens to turn into falafel to pair with a spread of seasonal dishes from the Petersham chefs. Rachel will tell you the benefits of foraging for gut health and mental health, as well as the deeper ecological benefits of wild foods.

11.30-12.30pm - Rachel will demonstrate how to grow micro greens and sprouts - two of the most nourishing ingredients to add to dishes in the winter.

12.30-1.30pm - A delicious nourishing lunch full of seasonal produce made by the Petersham chefs.

1.30-3pm - After lunch you’ll make a jar of the following to take home:Preserved lemons -and-Miso.

3-3.30pm - We’ll close the day with questions for Rachel, a book signing paired with Rachel’s date-sweetened ginger biscuits and a honey-fermented toddy.
