Bees are one of the strongest threads in nature's complex web. This workshop will guide you through a multitude of ways you can protect and attract our precious pollinators. Going beyond beekeeping, you'll learn how to create a bee-friendly garden (or patio if you're limited on space), ways to develop habitats if you don't have space for a beehive, and why other species of bee are as important as honeybees.
If you're looking to set up a bee hive, you’ll get an introduction you to different styles of hive With honey in the title, our host Rachel de Thample will guide you through an delicious tasting of different British honeys, teaching you how to detect flower flavours in your honey. You’ll also taste and learn to make recipes that use this prized ingredient respectfully, treating it like gold where the flavour shines without needing lots of it. There are also creative ideas on how to use beeswax and propolis.
The day will inspire you on all levels and you’ll leave with a new appreciation of the garden, the creatures within and the incredible food they create.
Overview of the day:
10.30am - Start the morning by tasting an array of British floral honeys paired with beeswax fermented cultured butter on freshly baked sourdough as you learn how flowers impact the flavour, texture and colour of honey.
10.30-11.30am - Get an exclusive tour of the Petersham garden where you’ll learn about flowers and herbs you can plant at home to attract bees and other pollinators. We’ll also do a bit of bee spotting to identify different species of bees, as well as have a peek at the Petersham bee hives.
11.30am-12.15pm - We’ll return to the glasshouse where you’ll learn how to design a bee-friendly space at home regardless of space and you’ll learn about different styles of bee hives.
12.15pm-1pm - Make your own beeswax lip balm using wax from our own hives.
1-2pm - A delicious lunch full of seasonal produce made by the Petersham chefs, as well as tasters of Rachel’s honeyed treats, including recipes featuring propolis and honey comb.
2-3pm - Learn how to ferment with honey and make your own bottle of mead featuring Petersham honey and seasonal fruit. You’ll also learn how to use honey medicinally, such as honey herb vinegars and tinctures.
3-3.30pm - We'll close the day with questions and further tastings.
